Payette Russet is a full-season, high-yielding variety producing oblong, medium-russeted tubers. It has cold-sweetening resistance, low reducing sugars, and consistently lighter fry color, making it ideal for processing with low acrylamide levels.
It exhibits strong resistance to tuber malformations, internal/external defects, late blight, Verticillium wilt, corky ringspot, early blight, common scab, and PVY. However, it is highly susceptible to Fusarium dry rot.
The variety has good storage capabilities, with a dormancy period of 165 days at 42°F, 135 days at 45°F, and 120 days at 48°F.
