“In Allegra’s Taste of the Future survey, 6% and 3% of foodservice professionals interviewed said they thought Mediterranean and Spanish, respectively, were the most prevalent cuisines eating out today,” he said. “What is particularly interesting, however, is that these figures shot up to 24% and 17% when asked what cuisines would be most prevalent in 2020.
