Potato Salad out-SHINES Pasta Salad

Yahoo’s “Shine” is one of the most popular women’s lifestyle websites, offering information and advice on everything from food to health and beauty to finances, as well as a community interaction.

Potatoes are often featured in a bright spotlight, as the editors believe in presenting dynamic content with a common-sense approach.

One of the most recent articles about potatoes was by the writers of EatingWell Magazine, titled:  “All-American food faceoff: Which is healthier, potato salad or pasta salad?”

Guess what? The potato salad won!

“…potato salad has one advantage over pasta salad—it’s almost all vegetable,” the writers explained. “Potatoes actually have many redeeming health qualities: they’re a good source of potassium and vitamin C and naturally deliver some fiber (especially when you keep the skin on) and protein.”

Even in reference to the “unhealthier” versions of pasta and potato salad, writers prefer potato salad. Why? They prefer it and, “the potato’s nutrients outshine those in white pasta.”
