The potato industry needs innovation to create a long-term rise in demand, U.S. Potato Board President Tim O’Connor said at the group’s annual meeting.
“There’s a difference between increasing demand and just getting a temporary sales bump,” O’Connor said March 12.
O'Connor mentioned five focus points: convenience, nutrition, retail, foodservice and export.
“We have to turn to these issues today so tomorrow looks better,” he said. “It won’t happen by just focusing on day-to-day sales activities.”
