HORN OF SPOIL

This ancient variety of Belgian origin takes its name from the Walloon "cwene di gâte" or "goat's horn". With its elongated, curved, very irregular shape and slightly pinkish skin, this variety is a cousin of the Ratte. On the flesh side, it combines firmness and delicacy, which gives it a slight nutty taste, to the delight of restaurateurs.
