Las tierras altas del centro y el oeste de Guatemala ofrecen a menudo condiciones ideales para el cultivo de la papa. En altitudes de entre 1. 500 y 2. 800 m, donde las temperaturas medias oscilan entre 7°C y 25°C, los agricultores pueden cosechar papas dentro de los 100 días siguientes a la siembra, y en las zonas de riego libres de heladas, los tubérculos se cultivan a lo largo de todo el año.
Como resultado de ello, Guatemala se ubica como el principal productor de papas de Centroamérica, con una cosecha récord en 2007 de 300.000 toneladas. El rendimiento promedio se estima en más de 27 toneladas por hectárea, el segundo en la región de América Latina, después de Argentina.
Sin embargo, el potencial de Guatemala como productor de patatas se ve limitado por la escasez de material de siembra certificado y la fragmentación de las cadenas de suministro. Recientemente el gobierno aprobó la importación de semilla de patata desde Argentina y está promoviendo la creación de asociaciones de pequeños productores de patatas.
