The Shadow Queen potato variety is a purple-skinned, purple-fleshed cultivar rich in anthocyanin pigments, giving it its striking purple color. This potato retains its vibrant color even when cooked, unlike many other potatoes that may darken or lose their color.
It has a firm, sticky texture, similar to aroid potatoes, making it ideal for cooking methods that highlight its unique color and nutritional benefits, such as roasting, baking, or making chips and fries.
Selected from open-pollinated seeds of Kita Murasaki, it was named and registered in 2006. The variety has a long, oval shape with both skin and flesh being purple. Its bright color is as vivid as a blueberry, and it contains a high concentration of anthocyanins (petanin), making it not only visually appealing but also beneficial for health.
