在过去50年中，阿根廷的马铃薯产量变化很小:2007年的190万吨的产量仅略低于1961年的产量。实际上，自20世纪60年代初以来，全国的产量平均约为200万吨，偶尔才会出现巅峰产量（如1998年产量达到340万时）。2005年人均每年马铃薯消费量约44公斤，这一消费水平自1990年以来几乎没有变化。
