白俄罗斯人热爱马铃薯。他们的人均消费量超过其他任何国家 — 估计为180公斤，即每人每天近半公斤。
据信马铃薯是从荷兰引入白俄罗斯的，到了19世纪马铃薯已经成为主要粮食作物和该国烹饪的核心食品。
如今，白俄罗斯在世界马铃薯生产国中排名第八，2007年的年产量为870万吨，约为小麦和大麦产量合计的两倍。过去15年来，白俄罗斯的马铃薯收获面积从78万公顷减少到40万公顷，但由于产出的提高，马铃薯年均产量稳定在860万吨的水平。
在苏维埃年代，白俄罗斯培育了改良的马铃薯品种曾占前苏联三分之一的马铃薯种植面积，并出口了50多万吨新鲜马铃薯和30万吨种薯。
