马铃薯在玻利维亚安第斯山脉种植了数千年，如今与大豆一起已成为该国最重要的粮食作物。种植马铃薯的农民大约有20万农民，种植面积大约13.5万公顷，种植者绝大多数是小农，他们种植马铃薯主要用于家庭消费。
大多数农民主要依赖能很好地适应玻利维亚"高气候风险"的传统品种。（尤其在高原上，马铃薯作物频繁遭遇冰雹、霜冻和干旱）。这些本地品种之一就是耐寒的"苦味马铃薯"，这种马铃薯生长在海拔高达4300米的地方，被加工成被称为chuño的脱水马铃薯产品，该产品可以贮藏长达10年。
