虽然马铃薯起源于安第斯山脉，但最近发现的DNA证据表明，今天世界各地种植的品种主要来自智利品种。虽然安第斯马铃薯在18世纪在欧洲占主导地位，但智利引进的种质在19世纪成为主流。
智利是拉丁美洲第六大马铃薯生产国，2006年收获量接近150万吨，创下最高纪录，与该国玉米和小麦的产量相当。尽管马铃薯可以在整个智利种植，但生产主要集中在北部的科金博和奇洛埃（包括奇洛埃岛，在这里，前哥伦比亚时期就已经种植了马铃薯）。
