马铃薯是16世纪末引入德国的，在接下来的200年里，马铃薯的种植几乎完全是用作动物饲料。但是，在18世纪70年代一场严重的饥荒之后，德国的君主——尤其是普鲁士大帝弗雷德里克也将这种块茎作为主粮予以推广。
如今，德国是世界第七大和西欧最大的马铃薯生产国，2007年的产量略高于1160万吨。即便如此，自1960年以来德国的马铃薯产量持续稳步下降，当时的产量接近3300万吨，马铃薯种植面积占全部可耕地的10%，而现在所占比例不足3%。
德国是马铃薯的主要加工国和出口国。在2005年，德国加工了650万吨马铃薯，包括330万吨被转化成马铃薯淀粉，另外出口了130万吨鲜薯和200万吨（初级产品当量）加工产品。它还是早熟马铃薯的主要进口国（2005年的进口量将近55万吨，主要来自法国、意大利和埃及）。（来源：国际马铃薯年）
