危地马拉中部和西部的高地通常为马铃薯种植提供了理想的条件。那里的海拔高度在1500-2800米之间，平均温度为7°C到25°C，农民可在种植后的100天内进行收获，而在无霜冻的灌溉区，全年均可种植马铃薯。
因此，危地马拉是中美洲马铃薯的主要生产国，2007年产量达到创纪录的30万吨。每公顷的平均产量估计超过27吨，在拉丁美洲地区仅次于阿根廷。
