危地马拉中部和西部的高地通常为马铃薯种植提供了理想的条件。那里的海拔高度在1500-2800米之间，平均温度为7°C到25°C，农民可在种植后的100天内进行收获，而在无霜冻的灌溉区，全年均可种植马铃薯。
因此，危地马拉是中美洲马铃薯的主要生产国，2007年产量达到创纪录的30万吨。每公顷的平均产量估计超过27吨，在拉丁美洲地区仅次于阿根廷。
马铃薯已经成为小农的重要经济作物，这些小农种植的马铃薯主要是向城市地区出售和向邻国出口。但是危地马拉作为马铃薯生产国的潜力因缺少认证的种植材料以及供应链的不完善而受到限制。最近政府批准从阿根廷进口种薯，并鼓励组建马铃薯小型生产者协会。（来源：国际马铃薯年）
