尽管自十八世纪起乌克兰就有种植马铃薯，这一作物对乌克兰的气候适应很慢，而且最初主要用于生产淀粉和酒精。直到二十世纪，这一作物才被作为粮食广泛种植，发展至今已被视为该国的“第二种面包”；并且马铃薯馅的perogie饺子是乌克兰人最喜爱的国民美食。
如今，乌克兰是全球第五大马铃薯生产国，位列中国、俄罗斯、印度和美国之后，年人均消费量高达136公斤。虽然北部波列西耶湿地的产量最高，但该国150万公顷的马铃薯农场中有一半左右是建在乌克兰中部森林草原地区的黑土上。
