For decades, the Idaho Potato Commission has primarily promoted russet Burbank potatoes.  In fact, when anyone says "potato,"everyone immediately thinks Idaho.

And, the IPC works tirelessly to ensure that all consumers -- including FS professionals -- understand that only potatoes grown in the state of Idaho can be called Idaho® potatoes.  This fall, the revered russet Burbank will soon be sharing the culinary stage with new varieties -- all grown in Idaho.  The varieties include Gold, Red and Fingerling Idaho-grown potatoes.

The growing conditions in Idaho -- both the rich, volcanic soil and the climate -- are the best in the world for yielding great tasting potatoes with a high solids content,"said Don Odiorne, IPC, VP of Foodservice.  "While Idaho has earned the reputation for growing a superior russet potato, we are now expanding our potato repertoire to showcase new varieties.

Similar to the russet, the new Idaho-grown varieties perform well in foodservice because of their low water content.  Additionally, the new varieties offer great taste, vibrant color and good value -- all critical elements for the foodservice industry challenged with treating consumers to a bit of indulgence as they continue to watch their wallets."
