Variety Description

The main potato variety in South Korea is “Sumi”, a potato that is high in starch and used as table stock. 

Sumi (Superior) is a variety that was bred in the United States in the 1961 and is cultivated for food and chip processing due to its high quality.

In addition it is easy to grow, making it the most commonly found potato in the South Korean market.

It has a round shape similar to that of a baron and is similar in color, but has a reticulated stripe on the shell and has shallow eyes.

Origin and Breeding History

Introduced in Korea in 1975, Sumi was selected as an encouraging variety in 1978. The Sumi variety can be cultivated nationwide, and is used for both processing and cooking because it contains starch and sugar in a medium between mucilage and flour.

Sumi potato has established itself as Korea's representative potato, with its light and chewy texture.
