Characteristics

- Usage: The Mountain Gem’s high U.S. No. 1 yields, coupled with excellent culinary and nutritional qualities, make it an excellent candidate for fresh-market production. It also maintains acceptable reducing sugar concentrations and fry quality from storage and does well with early processing. Excellent culinary usage.
- Skin and Flesh: It has a medium to dark russet skin with white flesh.
