With the United States Potato Board's (USPB) new "Quick and Healthy"recipe series, potato salads, soups, casseroles, fries, baked and mashed potatoes have never been easier. The series is comprised of the six most popular Internet-searched potato favorites. By using innovative techniques, cook times are minimized, while maximizing flavor and boosting nutritional value. Additionally, the USPB has given each of the six basics several flavor variations for a total of 24 new potato recipes to fit every palate.

Packed with essential vitamins and minerals, one medium potato (5.3 ounces) with the skin boasts more potassium than a banana, provides 45 percent of the recommended Daily Value of vitamin C, has just 110 calories and is fat-, sodium- and cholesterol-free.
