罗马尼亚是全球产量位列前20的马铃薯生产国之一，也是为数不多的马铃薯产量一直在增加的欧洲国家之一，产量从1961年的280万吨增加到2006年的400多万吨，同时人均马铃薯消费量自1990年以来增长了一倍以上。
Cartof品种于18世纪从德国引入特兰西瓦尼亚。今天，马铃薯是罗马尼亚农业和国民经济的重要作物，每年大约有220万罗马尼亚人在自己的马铃薯田地里收割这种块茎作物。在罗马尼亚，几乎所有的马铃薯都是以新鲜食用的方式出售，仅有2％的马铃薯用于加工。 2005年，马铃薯进口总量超过14万吨，而出口量不到5000吨。
