Potatoes have always been known as being versatile and a company in Malin, Oregon is proving just how versatile they can be.

Baley-Trotman Farms has come out with TaterPiks, a pickled product made with organic Klamath Pearl potatoes.

The potatoes are grown by Klamath Basin Fresh Direct and are infused with natural flavors to create a product that is distinctive and versatile. They are currently available in Savory Garlic Dill and Zesty Pep &Classic Dill.

“Right now we are marketing them to liquor stores and a few grocery stores in Oregon,” says Hollis Baley of TaterPiks.

She adds that they're introducing the product as a garnish, but it is much more versatile.

“We're marketing the product as a relish dish component and drink garnish,” she says, “though the product is much more versatile and can be used in salads, appetizers and a wide variety of other dishes.”

The product's first run was in early 2010 and was met with positive feedback. It is currently available in Oregon with distribution along the West Coast in the works.
