Russian blue potatoes are a dark purple potato variety that is believed to be native to Russia. Russian blue potatoes produce medium round, oblong tubers with a dark purple interior. It is a late variety of potato. The plant itself is large, semi-erect, with light blue flowers and dark foliage. Russian blue is rich in anthocyanins, vitamin C, potassium and dietary fiber. Potatoes retain their color when cooked and have a texture similar to russet potatoes.

A long season variety, Russian Blue has a brilliant purple colour on the inside and a dark purple skin. Great presented on a dish with yellow and red skinned potatoes. Definitely a conversation piece with company! Very high in antioxidants. it is a late season variety (100 – 120 days)
